Aging in the sea

Aged at -52 meters under the sea level, in the Cala degli Inglesi between the coast of Portofino and San Fruttuoso.

Nature of the soil

Area of the Romagna gypsum vein, medium-textured clayey soil rich in limestone and potassium. Exposure: West.

Vinification

The grapes are pressed directly, separating the grain from the second press. The free run must, after a slight static decantation, is sent to fermentation at a controlled temperature (12-14 ° C). Tirage in February 2013.

Tasting notes

Notes of gooseberry intertwine with syrupy yellow peach, while acacia honey lends a touch of refined elegance. A veil of freshly baked pastries precedes the finale with a hint of sage, adding an herbaceous note that bestows complexity and character.
