The bottles are stowed on the seabed of the Adriatic sea at a depth of 25/30 meters in stainless steel cages. Thanks to the isobar, the temperature is constant around 10/13 ° C, and the emergence takes place after a variable period of between 12 and 18 months depending on the marine conditions and the season.
Nature of the soil
Area of the Romagna gypsum vein, medium-textured clayey soil rich in limestone and potassium. Exposure: East.
Fermentation time up to 40 days with maceration on the skins, static clarification and tangential filtration. Aging in French oak barrels for 1 year.
Wine to finish the meal, with cheese or meat dishes such as stew. Serving temperature: 18-20 °C.
Impenetrable garnet red with a tendency to orange. 100% Merlot is at its maximum evolutionary thrust. On the nose, a true triumph of elegance of morello cherries, small berries in alcohol. Powerful but always very elegant balsamic; spices, dates and caramel speak of a wine that has wisdom, that knows how to excite and tell its long journey traveled for months in the seabed.
Infatuation and elegance lead us to the tasting on the palate, which is ready to welcome a mature wine, but which betrays the wait upon its entry and proves to be strong, muscular, vigorous and penetrating. The wine paws and recalls its vivacity provided by the great breadth of the mouth where balsamic and vertical scents explode, ending with a persistence that never ends!
A true masterpiece of tannin management and gustatory complexity. We are inclined to see it as a great wine to finish the meal, with cheeses or meat dishes such as stew. The combination with meditative tasting is also excellent, in the glass it continues to change and transform itself as it rotates, granting the taster a kaleidoscopic spectrum of exciting scents. A great wine that maintains the character of the wines aged in underwater of Tenuta del Paguro.
