For the first time in the world, in 2024 the sommeliers of the 50 best restaurants came together, the ranking that is drawn up every year by William Reed and which establishes which are the best restaurants in the world.
The reason for this meeting was to create a wine list, an incredible selection of the best wines in the world according to these exceptional head sommeliers: WBSS, World's Best Sommeliers' Selection.
Only 17 Italian wines were included in the selection.
Only 2 wines in the selection were aged using the underwater method: the wines of Tenuta Del Paguro.

Squilla Mantis, Albana - Maison Collection
The bottles are stowed on the seabed of the Adriatic sea at a depth of 25/30 meters in stainless steel cages. Thanks to the isobar, the temperature is constant around 10/13 ° C, and the emergence takes place after a variable period of between 12 and 18 months depending on the marine conditions and the season.

Aged at -52 meters above sea level for 6 months, in the Cala degli Inglesi between the coast of Portofino and San Fruttuoso, during the immersion for R&D purposes in collaboration with Florence's university DAGRI.
