Mare Urchin, Metodo classico

Aged at -52 meters under the sea level, in the Cala degli Inglesi between the coast of Portofino and San Fruttuoso.

Area of the Romagna gypsum vein, medium-textured clayey soil rich in limestone and potassium. Exposure: West.

The grapes are pressed directly, separating the grain from the second press. The free run must, after a slight static decantation, is sent to fermentation at a controlled temperature (12-14 Ā° C). Tirage in February 2013.

Mare Urchin elegant and silky character make it a delightful companion to clams passatelli, baked squid, young or soft cheeses.
